Manomasa Fish Tacos,
Makes about 12
150g Chipotle & Lime Manomasa chips, plus extra to serve
250g firm white fish
40g plain flour
1 large egg beaten
Oil for deep frying
Red & white cabbage finely shredded to serve
Crush the Manamasa chips and place in a freezer bag. Slice the fish thinly before dusting lightly with plain flour.
Dip each piece in the beaten egg before coating with the crushed chips by dropping in the bag and shaking until fully coated. When all the fish is coated heat the oil until it reaches 180C then fry the fish pieces in small batches for 3 minutes until crisp and cooked through. Drain on kitchen paper.
To serve, spoon a little shredded cabbage on to a Manomasa chip & top with a piece of fish.
Add a little lime juice, before eating.
Perfect for the BBQ Season as a starter or side dish
Makes 12 pieces
6 fresh corn on the cob, halved
1 tbsp oil
1 tsp smoked paprika
75g white cheese, crumbled (we used Wensleydale but Feta would be good too)
50g Manomasa Manchego & Green Olive tortilla chips
Pre heat the barbeque. Brush the corn with oil before placing on the grill. Cook for about 10 minutes turning frequently until cooked and lightly charred in places.
Remove from the heat. Mix the mayonnaise and paprika together before spreading a thin layer over each piece of corn.
Sprinkle the cheese and crushed Manomasa chips over to coat and then serve.
500g minced beef
3 spring onions, finely sliced
3 Tbsp fresh coriander, chopped
1 medium egg, beaten
100g Manomasa Manchego & Green Olive chips, crushed
1 tbsp oil
4 slices of cheese
8 slider buns
18 Manomasa chips to serve
Lettuce, Sliced tomatoes to serve
Place the mince in a large bowl then add the spring onions, coriander and egg, stir well to mix. Now mix in the crushed Manamasa chips.
With damp hands divide the mixture into 8 and shape into burgers large enough to fit your buns. Chill the burgers for 30 minutes.
Brush with oil and cook on the preheated grill for about 12 minutes until cooked through, turning halfway.
Split the buns and fill with lettuce & tomato before topping with the burger a few Manomasa chips and half a slice of cheese. Serve.
